Banana bread recipe – yum!
Bill Granger made his name as Australia’s king of brekkie. Newly relocated to the UK to launch a cooking assault on London, Granger has kindly agreed to share this simple but tasty banana bread recipe with TNT.
What you need:
45g brown sugar
30g almonds, chopped
255ml sour cream
1 tsp bicarbonate of soda
100g unsalted butter, melted
230g caster sugar
2 medium eggs, lightly beaten
250g plain flour
1 tsp baking powder
1 tsp ground cinnamon
250g mashed ripe bananas.
The work:
Preheat oven to 180ºC. Grease and line two 10cm x 18cm tins with baking paper.
Mix together the brown sugar and almonds and set aside.
In a large bowl, mix the sour cream and bicarb, and leave to stand for 5 mins. Then stir in the melted butter, caster sugar and eggs.
Sift the flour, baking powder and cinnamon into another bowl. Fold in the sour cream mixture and bananas.
Divide the mixture between the tins and sprinkle the brown sugar mixture on top.
Bake for 1 to 1¼ hours. Set aside to cool for 20 mins before turning out on a wire rack to cool completely.
