Here at TNT Magazine, we’ve lost count of the number of times we’ve cursed the crappy coffee on offer round our way. Luckily, London boasts some bloody fantastic independent cafes, of which the Antipodean-owned Kaffeine in Fitzrovia is an absolute corker.

Peter Dore-Smith and team turn out perfect flat whites every time, and even have a selection of our favourite Aussie and Kiwi treats on offer. Peter’s kindly agreed to share his lovely friand recipe with us. Talk about a nice guy.

What you need:
For the friands:
10 egg whites
1kg ground almonds
250g butter
Zest and juice of 2 lemons
1 green apple
100g raisins
300g caster sugar
150ml natural yoghurt
½ tsp cinnamon
1 tsp baking powder
150g mascarpone
400g icing sugar
1 tsp lemon juice.

For the icing:
150g mascarpone
400g icing sugar
1 tsp lemon juice.

The work:
For the friands:
Preheat the oven to 160ºC.
Melt butter and leave aside.
In a large mixing bowl, combine ground almonds, sugar, raisins, cinnamon and baking powder. Add zest and juice of lemons to mixture. Peel apple and grate – add to mixture. Add butter, egg whites, yoghurt and combine well.
Refrigerate overnight or for at least eight hours.
Grease a 12-hold muffin tin. Spoon in mixture to ¾ full. Bake for 30 minutes until golden brown on top. Leave to cool for 10-15 minutes, but remove while still warm – otherwise they’ll stick.

For the icing:
In a large mixing bowl, add the lemon juice, mascarpone and icing sugar.
Combine until smooth.
Pipe or spoon icing over friands and allow icing to set for 30 minutes.
