Summer cocktail recipes

Summer’s here. Invite your mates round for a cocktail night or tipple in the sun.

Be Pamplemousse
Make it: Pour 50ml of Bénédictine into a highball glass; top up with white grapefruit juice and ice. Garnish with a grapefruit slice.
Taste it: Benedictine is a herbal liquor originally made by monks in Normandy. This cocktail is simple to make and more zingy than sweet.

Pimm’s Royale
Make it: Pour 25ml of Pimm’s into a champagne flute; top up with something bubbly; and garnish with a strawberry.
Taste it: This makes a nice change to the standard Pimm’s and fruit concoction, and the champagne adds a touch of class.

Caipirinha
Make it: Put three lime quarters and 1 tbsp of sugar into a glass; muddle the lime pieces by pounding with a wooden spoon until sugar is dissolved into the lime juice; fill the glass with ice and add
3 tbsp cachaça, stirring well.
Taste it: This is Brazil’s favourite tipple for good reason − it’s a carnival in a glass.

Venetian Spritz
Make it: Pour 25ml of Campari into a glass, add a dash of soda water and top up with Prosecco or white wine. Garnish with a slice of lemon.
Taste it: Channel Venice with this elegant cocktail. It oozes sophistication and you will too.
