London’s first authentic ‘pastificio’ (pasta shop) has announced its spring-summer pasta workshop series at both its Shoreditch and East Dulwich restaurants.

Hosted by Burro e Salvia founder Gaia Enria, the hour and a half-long workshops will run weekly from Saturday 9 April and will focus on either simple egg pasta, filled egg pasta or semolina pasta.

Gaia will talk guests step-by-step through how to make their own versions of the pasta shape designs available in the shops at both restaurants. All of the pasta made can then be taken home to enjoy after the session.

The weekly workshops will unveil the secret of what makes great tagliatelle, or show how to fold a plin, cardinale, tortellone or cappelletto (just a few of the many names Italians give to their pasta according to the region and filling).

The workshops - which can accommodate upto six people per session - are priced from £40 per person, and include a welcome drink on arrival and 10% discount on all in-shop purchases, on that day.

Gaia says of the upcoming workshop series: “Our special workshops at Burro e Salvia very much celebrate the art of slowing down, the Italian way. One egg per every 100g of flour, it really is that simple. We invite guests to both our East Dulwich and Shoreditch shops to learn the processes and small rituals behind this beautiful Italian artisan craft, we are so proud to be part of. We will give novices through to pasta connoisseurs the unique opportunity to broaden their knowledge on the subject, as they get their hands messy and make their own pasta. As well as being educational, the workshops are a lot of fun, and we always relax with a drink, and of course some delicious pasta, at the end.”
