What baffles me about London is why there is so much bad quality fish for sale and why we export all of our prawns to Europe. Pretty much any prawn on the menu in a restaurant in London will come from Asia.
London’s best-kept secret is Tong Kanom, Kensal Green. At Street Kitchen we’re exploring a new Asian streetfood concept using 100 per cent UK meat and vegetables. This place is inspiring, as it makes really authentic Thai food.
When I want to chill out I go to Primrose Hill Village, from café to café. Lanka has a nice patisserie and Pink Café makes delicious apple cake.
The most interesting person I’ve met was an Italian waitress who dreams of opening her own place; her passion and personality are astounding. .
My favourite place for a drink is the Cock And Bottle in Notting Hill. It’s a good old-fashioned boozer!
What gets me up in the morning? The market run! We pick up our vegetables from our farm suppliers at the crack of dawn. I love collecting the amazing sustainable UK produce.
Where will you be watching the Olympics from? Luckily, we have huge screens at our original Airstream on Broadgate Circle and at our second pitch at The Book Club Basecamp on in Shoreditch. It looks like we will be watching the Olympics from the Airstream hatch!
My perfect weekend would involve heading down to one of our farm suppliers, going for a long walk in the fields, stopping off for a pub lunch and a couple of pints and then staying the night in a cute B&B.
The biggest faux pas I’ve made was during my time at Notting Hill Brasserie. I used to walk around the tables in the restaurant and talk to the customers every night.
One night I said “nice to see you again” to a customer that had come to dinner two nights in a row. I hadn’t noticed that he was with his wife on the first night and his lover the second!
Five words that sum up London ... Diversity, culture, progress, energy, contrast.
