For the last seven months, the Pig Idea team have been rearing eight pigs in Stepney City Farm on a diet of spent brewers’ grains, unsold fruit and veg and okara (a tofu by-product), food that would otherwise have gone to waste in a landfill. The pork produced by the pigs will then be served up today by some of the city’s best chefs. Will you taste the difference?
