Valencia might not be as popular a destionation as Barcelona or Madrid, but it should! The city is full of life and has got an amazing city center. The people are very nice and you can enjoy sighseeing more as it is not as crammed as the other famous Spanish cities. The only disappointment is the sea, not really crystal clear… Night life is great though, and the locals are very keen on foreigners, especially girls!
