And to help you on your way, Solomon has shared this recipe for Singaporean laksa – a hearty, tasty and sometimes fiery soup stuffed full of goodness.
WHAT YOU NEED
1.25l of chicken or fish stock
100g of vermicelli rice noodles
500g of chicken or green prawns
1/3 cup coconut milk
100g fried tofu
A handful of fresh bean sprouts
A bunch of coriander
The juice of one lime
1/3 jar of Singapore laska paste
THE WORK
For two portions, bring 1.25l of stock to the boil and cook 100g rice vermicelli for three minutes.
Stir in 1/3 jar Singapore laksa paste. Add 500g sliced chicken fillet or green prawns, deveined, and cook just until colour changes, then stir in 1/3 cup coconut milk.
Add slices of fried tofu, fresh bean sprouts, chopped coriander and the lime juice.
