Spring lamb recipe to die for
Naomi Watts audaciously turned down a date with Tom Cruise in favour of her mum’s good old lamb roast in a classic 1990 Aussie TV ad. While the world has changed a lot in 20 years (Watts is now a bonafide star and Cruise is, well, a Scientologist) the lure of a lamb roast is a constant. Whip up your own and enjoy the delicate flavour of new season spring lamb.
What you need:
One leg of lamb, bone in, approximately 2kg
5 peeled garlic cloves
A bunch of fresh rosemary
Olive oil
Salt and pepper.
The work:
Preheat the oven to 200°C.
Use a sharp knife to prick the leg of lamb all over (20-30 times) and about 2cm deep. Cut the garlic cloves into thin strips and place one slice of garlic into each hole with a few rosemary leaves. Continue until all the holes
are full.
Season with salt and freshly ground black pepper and drizzle with oil.
Place the lamb directly onto the oven rack with a roasting tray directly underneath to catch the fat as it drips from the lamb. Roast for 1 hour and 15 minutes or until cooked to taste, basting frequently.
Let the lamb rest for at least fifteen minutes and then serve, with roast veg, to six hungry people.
