The scene: This Mexican version of Subway is tucked away behind Oxford Circus’ maddening crush of shoppers. The chatter of young Spanish things fills the air in a casual dining space. Choose your tortilla, filling, topping and side at the production line counter and watch your bespoke bundle of foodie goodness appear.

The grub: The emphasis is on the way the Californians do Mexican – with their hands, unadulterated by overpowering sauces and with a healthy dose of black beans and light pico de gallo. Marinated chicken is piled on to my warm tortilla and layered with fluffy lime-cilantro rice, black beans, vibrant guacamole and a drizzle of salsa roja (hot). The result is a substantial and incredibly fresh meal.

There are also corn tacos for coeliacs and ‘naked burritos’ without bread for the carb-conscious.

Bill please: Medium burritos are £4.95; large are £5.95. A frozen margarita is £4.25 and beers range from £2.95 to £4.95.

Verdict: This staple of Mexican life is now a staple of mine.
