Behind the bar: Loads of contemporary sake, but you should really go for the championed cocktail list. The Nippon Mojito $20 is a Tokyo-inspired take on the classic with the sweet potato shochu adding a sugary kick. For something less sweet, try the Blood Orange and Plum Sour $20, a whiskey-soaked citrus delight.
