This year National Paella Day is on Sunday 27 March and Tapas Revolution are extending their celebrations for the whole weekend – all diners ordering Paella Valenciana or Paella de Verduras will receive a free glass of sangria from Friday 25 to Monday 28 March.

Named for the pan it is cooked in, this famous rice dish dates back to the 18th century and, although internationally regarded as Spain’s national dish, it is actually a regional dish from Valencia in eastern Spain.  Originally a staple for farmers and labourers, cooked over a wood fire for lunch and eaten straight from the pan, Paella later became a flexible way of cooking for every occasion, from an acceptably simple meal during lent to an extravagant feast for religious and family celebrations.

Despite the many endless possible combinations of ingredients, in Valencia only Paella Valenciana (Valencian Paella) and Paella de Marisco (Seafood Paella) are considered authentic, with all other recipes deemed inferior and known as ‘Arroz’, the Spanish for rice dishes.

Chef Omar Allibhoy’s Paella Valenciana is made in the traditional way, with chicken, butter beans, sweet paprika, saffron and Spanish Bomba rice.
